Minnie Chocolate Chip Cookie

It's just not Christmas Time without a little time together in the kitchen with family and friends. Since Darth Vader wasn't up to baking, Minnie decided to take a spin around the kitchen and see what she could mix up for our (gluten free, vegan) cookies.
Because my kids come from the "more is more" school of cookie thought, we decided to make more small "Minnie" cookies so that each of them could get many more cookies...
Ingredients
1.) Preheat oven to 350°F.

Ingredients
- 2 3/4 cup almond meal
- 1/4 cup coconut flout
- ½ teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup white sugar
- 1/2 cup brown sugar
- ¼ cup extra virgin olive oil
- 2 teaspoons vanilla extract
- 1 Tablespoon egg replacer plus ¼ cup water (or 2 eggs)
- ¼ cup unsweetened almond milk
- ¼ cup dark chocolate, roughly chopped
1.) Preheat oven to 350°F.
2.) Add the flour, salt, baking soda, white sugar and the brown sugar into the big bowl of your favorite stand mixer. We LOVE using the paddle attachment on the stand mixer, stir the dry ingredients on low speed unless you enjoy excitement and danger. Then feel free to crank it up.
3.) Add in the olive oil, almond milk, vanilla and egg replacer and continue to stir. It should smell super yummy and coconuty. Tasting encouraged!
4.) The dough might be a little crumble, but that's kinda how gluten free dough rolls. Either add in the chocolates and mix on low or stir in the chocolate by hand.
5.) Taste again.
6.) Reserve some dough for cooking.
7.) Using a small scooper, scoop the dough into balls (less than an inch)
8.) Put on a foiled or silicone mat covered baking sheet two inches apart. Pat down into a little.
9.) Bake for 10-12 minutes.
10.) Eat some.
11.) Transfer what are left to cool on wire racks.
Scoop the cookies onto the wire racks. Taste test as you go. |
