Welcome Foodie Friday Blog Hoppers! Chocolate Chip Pecan Mickey Pancakes (GF and Vegan) Location: My Kitchen! Cost: The Cleanliness of My Kitchen Magical breakfast for one! My kids love making pancakes at home because they get to be in charge of creating their very own culinary magic. The chocolate chips may have something to do with it, too. I love mixing up our own pancake batter at home because it's easier to mix our own than to find gluten free vegan pancakes anywhere outside of Disney. Honestly, there is no telling how much milk or vegetable oil went into these. They seemed to taste pretty awesome regardless of exact measurements! Ingredients: 1 cup Bisquick Gluten Free mix 1 cup almond milk 1 egg substitute (your choice. Dark Side Gingerbread Cookies Location: My Kitchen, Texas, y'all Cost: Time, love and a couple Imperial Credits In honor of National Cookie Day, we spent an afternoon earlier this week making some gingerbread cookies. As I tweeted on Wednesday, #ThanksToStarWars my children prefer their gingerbread a little bit on the dark side. Thankfully, I've adapted a lovely gingerbread man recipe that is both Gluten Free and vegan, since that's how the Sith roll these days. Dark Side Gingerbread Cookies - GF, Vegan, Dairy, Nut, Egg Free Ingredients 3/4 cup vegan margarine, softened (we use Earth Balance) 1 cup brown sugar 1/4 cup black-strap molasses 1 Tablespoon Ener-G Egg Replacer and 1/4 cup warm water 2 3/4 cup Gluten Free All Purpose Flour Mix (we like Bob's Red Mill) 2 teaspoons baking soda ½ teaspoon salt 1 teaspoon ground ginger 1 teaspoon cinnamon (or a smidge more if you like spice.) A time when your previous trip has been reported, scrapbooked and blogged and your countdown to the next Disney vacation still seems interminable. That's when I start breaking out my own personal supple of pixie dust in the form of baked goods. On a recent run by our local HEB (an Austin based widespread Texas grocer) I hit the mother lode in terms of gluten free new to our area products. Tyson (gluten free) chicken nuggets, Pillsbury (gluten free) chocolate chip cookie dough and Pillsbury (gluten free) dough quickly jumped into my cart and I headed home, curious as to what I might make with the dough. Allergies at Sea

A vegan mom, a dairy allergic preschooler, and a gluten intolerant kindergartner step onto a cruise ship ... No, this isn't the setup to a joke, but rather my life last November. Would we starve? Would we enjoy any of the allergy-free offerings? Would we all live on steamed vegetables for seven days straight? If there is one thing Disney does exceptionally well, it is their world-renowned customer service and nowhere does this Disney service shine more than in the instance of special needs. Given our various diets, going out to eat is a bit hazardous at best. Gluten Free Muffin and Donut Plate Location: Animator's Palate, The Disney Magic Cost: Complimentary with cruise fare   We left our stateroom neat and tidy that morning, carrying only a single backpack down to wander deck four to watch the dock workers scurry about their business below. Huge crates of bananas, apples, and other produce waited in orderly rows as the enormous bins of luggage stuffed chock full of a weeks worth of memories exited from the lower decks. The Old Customs House On a recent cruise, our family had the pleasure of visiting Key West for the first time.  Now what food goes with Key West? Key Lime Pie, of course!  In my extensive pretrip research, I had a fairly difficult time locating Gluten Free and vegan Key Lime Pie on Key West. While The Café offered vegetarian and vegan dining, as Key Lime Pie wasn't on the menu, and nothing was gluten free, we decided to continue our hunt elsewhere. I have since read trip reports where The Café lists vegan Key Lime Pie on the menu, so your mileage may vary. During one of our many evenings watching Food Network (one of Ben's favorite networks) Kermit of Kermit's Key West Key Lime Shoppe gave an interview and tour of his lovely little café. Hoping against hope I pulled up his website.  Nope, nothing listed as gluten free. On closer  review, I found that Kermit's does offer gluten free key lime pie by the slice. If pie isn't your t...
